自己紹介

皆様こんにちは！ 私は、東京でアメリカンスタイルのお菓子を趣味で作っている「MONSTA Sweets」の創設者、ナバサ　グレゴリオです。 現在はクッキーとブラウニーを中心に提供していますが、今後はケーキ、チーズケーキ、スコーンやペット専用のお菓子などに商品の幅を広げていきたいと考えています。

Hello all! I am Gregorio Narvasa, founder of MONSTA Sweets, a hobby baker making American style sweets in Tokyo, Japan. Currently we offer cookies and brownies, but we would like to expand on offering cakes, cheesecakes, scones, dog treats, and more.

このプロジェクトで実現したいこと

現在の開業資金貯蓄は300万円です。この資金集めの目的は、今まで不定期なポップアップでの出店を行なっていましたが、本格的なビジネスを実現する、フルキッチンを装備した常設のお店をオープンする事です。

This fundraising is to take my hobby pop-ups, into a full fledged business, using the funds to obtain a full kitchen set up. 

プロジェクト立ち上げの背景

「MONSTA Sweets」は2021年12月に考案し、レシピの改良を重ね、ブランディングを確立してきました。 アメリカとは異なり、日本では自宅での焼き菓子等の製造、販売は法律で認められていません。そのため、食品衛生責任者の資格を取得し、地元のケーキ屋さんと契約を結び、キッチンをお借りし、クッキーを製造しポップアップでの販売を行なってきました。

MONSTA Sweets was conceptualized in Dec 2021, and proceeded with recipe testing and branding development. In Japan, the laws do not allow for at home start up bakeries, unlike countries like America. We were able to make an agreement with a local bakery to use their place for baking, and also obtained a food handlers certification.

2022年5月28日、初のポップアップイベントを開催。おかげさまで大盛況、600個以上のクッキーが約2時間で完売。 その後も、度々ポップアップ販売を行い、皆様のおかげで、毎回ほぼ完売となりました。

On May 28th 2022, we held our first pop-up event with a huge turn out, and SOLD OUT of over 600 cookies in just over 2 hours. Since then we've had several more successful pop-ups selling almost always selling out.

2022 年 11 月に、渋谷　宮下パーク屋上でコーヒーを販売している 「OJIZO Coffee」と提携。コーヒーとクッキーは相性抜群のため、皆様に喜んでいただけました！同時に、月に2度の通信販売も開始し、好評を得ました。 すべてが順調に進んでいるかのように思えました。

In November 2022 we partnered with OJIZO Coffee which is located in the very popular Shibuya shopping and entertainment district. During that time the demand for our cookies at OJIZO Coffee kept increasing. We also were offering mail orders twice a month, always selling out. Everything seemed to be on the up and up.

しかし残念ながら、2023年7月にキッチンをお借りしていたケーキ屋さんとの契約が終了してしまいました。 私たちは代わりとなるキッチンスペースを探しましたが、物流やコストの面で納得のいくキッチンを見つけることができませんでした。多くのジレンマの中、本腰を入れてクッキーを作りたいという心に火が着き、次の一歩を踏み出す決意を新たにしました。

Unfortunately at the beginning of July 2023, the agreement we had for use of the baking space came to an end. We searched for a reasonable kitchen alternative but could not find one that logistically, or cost wise worked. Effectively we are dead in the water until we can set up our own kitchen shop space.

MONSTA Sweetsのクッキーを大手企業や団体様にも提供させていただく機会もありました。実績としてはTIK TOK、DATADOG、フルーツ・イン・スーツなど。 有名雑誌「東京ウィークエンダー」でも「東京でバズる焼き菓子」として紹介されました。
We have had the pleasure providing MONSTA Sweets to some major corporations and organizations, such as TIK TOK, DATADOG and Fruits in Suits, here in Japan. We were also featured as "Tokyo's Buzziest" for baked good in the Tokyo Weekender.

私たちは事業を始めるにあたり、それなりの貯蓄を備えていますが、たとえ納得の行く金額の物件を見つけることができたとしても、十分機能するキッチンを作るためには改築や改修を行い、必要な設備を導入し、厨房設備が施設基準を満たすようにする必要があります。 そして初めて営業許可の取得が可能となります。

We do have chunk of savings aside to put down on starting the business, but even if i could find a cheaper location to lease we still would need to be able to do construction/renovation and purchasing necessary items to make a fully functional kitchen, to then obtain our baking license.

現在の準備状況

課題     

良い物件に投資できるお金があること。 現在検討している物件が 2 件あり、規模も価格も適切ですが、契約に必要な資本がすべて揃っていない場合は機会を逃し、次の物件が見つかるまで動きがとれなくなります。    

 物件の契約が済むと、店舗の改修、及び設備の導入が必要となり、十分な資金を手元に用意しておく必要があります。 販売利益が出るよう、できるだけ早く事業を立ち上げる必要があります。

CHALLENGES

Having the money to put down on a good location. Currently there are 2 properties we are looking at, that are the right size and cost but if we don't have all the capital to put down for the contract we can miss the opportunity and delay us until another property opens up.

Once we have the property contracted we need to have enough funds on hand to do all the renovations and installations for the location. We would need to launch as soon as possible so we can start generating income from sales.

これらは、ベースキッチンを持ち、菓子製造業許可を取得するために必要な主なアイテムです。
