Kyojin Stewhouse is an Irish restaurant that opened in 2015 on the Togoshi Ginza market street in Tokyo. Owner-Chef Alan Fisher is from Dundalk, Co. Louth, Ireland.
In early 2021, during the pandemic, Alan relocated the business to Matsue City in Shimane prefecture. The main purpose was to grow the e-commerce business which he launched in April, 2020. The Tokyo location was too small to support both a Resturant and Online business at the same time so the decision was made to move outside of the City. Alan choose Matsue due to itâs historical cultural connection to Ireland through Irish-Greek writer Patrick Lafcadio Hearn also known as Koizumi Yakumo. Over 100 years ago, Hearn lived and worked in Matsue where he met his wife Koizumi Setsuko. A Museum dedicated to him is located in the City and operated by his living relative Koizumi Bon. Since the E-commerce business had only been launched and was still a small but exciting opportunity he also decided to open a Stewhouse in Matsue to supplement sales.
In February 2023, when the Tokyo location contract expired Alan chose to close the first Stewhouse in Togoshi Ginza, in order to focus resources more efficiently in growing the e-commerce business based in Matsue.

Alan has specialized on a particular niche of traditional home-made Irish dishes such as Soups, Stews and freshly baked breads. This authentic cuisine prepared by Alan has proven popular in both Tokyo and Matsue. For example, the Irish Lamb Stew, has a taste not often found in Japan. Frequently, customers who have visited Ireland previously have expressed how that taste reminded them of the time they spent there or how it exceeded what they experienced in Ireland.Â
These soups and stews are filled with fresh ingredients, healthy vegetables, chunks of meat and are popular for both men and women of all ages.
Since our move to Matsue weâve worked hard to keep our overall quality standards high. This is matched by our Google Review rating of 4.7 with just under 200 contributors in less than 3 years.Â
While there are many Irish Pubs in Japan, Kyojin Stewhouse has positioned itself as a restaurant primarily using food as the main tool to introduce their many customers in both Tokyo and Shimane to Irish Culture. This has helped broaden the potential customer base to include familyâs with young children, elderly as well as young couples. In April 2020, we started selling frozen stews and other products online in response to the Corona Virus pandemic. Upon our launch many people were kind and ordered online especially when eating out was difficult. Ever since then, people around Japan have continued to order products for home use and as gifts.

While the current location is convenient in terms of time it takes to walk from the nearest JR Station, there is limited footfall outside which significantly reduces spontaneous customers visits. The location is difficult to find unless you have made plans to visit and researched the location in advance. This is in contrast to the Togoshi Ginza Stewhouse in Tokyo which regularly saw walk-in customers as they meandered along the market street.
This lack of footfall makes weekday sales in Matsue particularly challenging as many of our customers visit from outside the City or Prefecture. The population in Matsue overall is also declining which is reflected in the decreasing number of yearly JR Matsue Station users. As the overall customer base gradually shrinks it poses a particularly difficult challenge for the Restaurant business.

Whether the restaurant is busy or not, it requires a similar level of food preparation, staffing and utilities to open even on weekdays when customer traffic is low.
The current economic climate has resulted in a variety of increased commodity costs. Combined with the potential for food wastage and the difficulty in reducing overall fixed costs such as rent then it is likely that this business climate may become even more difficult in the future placing a greater strain on business resources.
Several outside factors have lead to inflation both on food ingredients, utilities such as gas and electricity and transportation and delivery costs. This is further exacerbated by the weak yen when purchasing any imported products such as meats and beers. These costs will likely continue for the foreseeable future representing a significant challenge to the overall restaurant industry.

The fact that weâve needed to operate with fewer part-time staff during the pandemic and that the number of people needed each day differs depending on when group customers visit makes operating a well-balance staff schedule a big challenge. We are understaffed and often invite new staff to support us on short notice which in turn has a negative effect on the Customer Service experience due to a lack of training. Coordinating people has become a daily headache.

However, we have seen an increasing number of orders coming from Customers throughout Japan reaching all 47 prefectures. For instance, when Kyojin Stewhouse first opened food freezing equipment was particularly expensive. This equipment has become more affordable year after year. It is now possible to freeze stews more efficiently than in the past maintaining a high level of food quality. Mixers and other cooking equipment have also helped increase productivity, making it possible to produce larger quantities of foods even with a smaller number of people.

With the closure of the restaurant, a central kitchen will be established for the production of our food products. This central kitchen will be located near our company headquarters and Jewelry Salon operated by Alanâs wife, jewelry designer Ai.
The building is located in front of the boarding area for the Matsue Horikawa Tour Boat, only 3 doors away from the Jewelry Salon. The site and current structure at the address - 111, Suetsugihonmachi, Matsue City have been acquired. However, the current building, which was formal a restaurant has remained untouched for several years and fallen into disrepair. It requires extensive renovations, including interior, electrical and plumbing work, ceiling and roofing repair.

Our first goal is to raise 3 million yen through crowdfunding. However, weâll set this as our first target. If we could exceed this goal weâd set subsequent targets of 5 million or even 10 million yen. The more funds we raise, the more we will be able to improve our central kitchen with new equipment that will enable us to expand the range of Irish food offerings we can deliver to people throughout Japan.

For almost a decade, Alan has dedicated his life to using food to share Irish Culture with people in Japan. Both in Tokyo and Matsue his customers have seen his hard work and dedication to this dream. Recently, this effort culminated in breaking two Guinness World Records for the Longest Baking Marathon and Longest Cooking Marathon working over 168hours in total from Sept 25th to Oct 3rd 2023. From a humble beginning in a small shop on the Togoshi Ginza market street he has worked tirelessly to build a reputation for Irish Food in Japan.
However, now we have reached a crossroads. It is not possible for Alan to peruse both businesses and we must decide what is the best direction for the business. By restructuring the company we hope to build on this achievement by creating a product manufacturing business that can reach all of Japan with potential to grow internationally too.
